Lasagna Recipe

I made some lasagna out of my stockpile and it was surprisingly delicious!  Here's the recipe.  It makes 2 9 X 13 pans.

1 Rotisserie Chicken                                                      $4.98 @ Costco
1 package of Ronzoni whole wheat lasagna noodles       $.50 @ Albertsons with coupon
1 bag of Steamfresh frozen chopped broccoli                  $.48 @ Food4Less with coupon
1 jar Classico white sauce                                               $.67 @ Target with coupon
2 jars Ragu red sauce (Mama's Garden something)         $.74 @ Albertsons with coupon
1 Knudsen Cottage Cheese (blended)                            $1.49 @ Stater Bros with coupon
1 lb Mozarella Cheese shredded                                    Free with WIC
1 egg                                                                             Free with WIC

Tear up and chop the chicken, boil the noodles, mix the last three ingredients together in a bowl but save a little mozarella out for sprinkling on top.  Layer noodles, chicken, broccoli, cheese mixture and sauce repeatedly until it's gone.  Shoot for about 4 layers of each in each pan.  Sprinkle with remaining cheese.  I covered it in foil and put it in the freezer, then baked it with the foil on it for an hour and a half at 350, but you can bake and eat it right away if you want.  Then you would only need to bake it until it was bubbly.  Cover it with foil to keep it from burning.

That's $4.43 per pan of lasagna and one pan fed all 4 of us with about 3 servings left.
